I'm assuming the snes classic will be emulation, and I read that StarFox 2 will be included. Does anyone think this could open the door to examining and emulating Super FX onto the SD2SNES?

The Super FX is already a pretty well understood chip. The Super NES Classic won't provide any insights existing open-source emulators can't provide; if I had to guess, based on Nintendo's track record, it probably gets plenty of known traits of the chip wrong in ways that don't affect games that much.

EDIT: For that matter, the SA-1 is also pretty well understood. The biggest issue with them is that they both are relatively quite complex.
